What Does "Mehadrin" Mean?

Mehadrin (מהדרין) literally means "those who beautify" — referring to Jews who go beyond the basic requirements of halacha to observe mitzvot in the most beautiful, stringent way possible. In the context of kashrut, mehadrin means the highest standard of kosher supervision.

On a mehadrin safari, this translates to:

  • All meat is glatt (smooth lungs, no adhesions) from certified shechita
  • Produce is checked for insects according to the strictest opinions
  • Chalav Yisroel dairy products used where available
  • Pas Yisroel bread baked on-site
  • Full separation of meat and dairy — dedicated equipment, separate prep areas, distinct serving times
  • A qualified mashgiach temidi (full-time supervisor) present for all food preparation

How We Set Up a Mehadrin Kitchen in the Bush

Setting up a mehadrin kitchen in a remote safari lodge is one of the most complex logistics challenges in kosher travel. Here's our process:

Step 1: Advance Team Arrival (48 Hours Before Guests)

Our kitchen team arrives two days early to:

  • Kasher all equipment that will be used (ovens, grills, pots, surfaces)
  • Set up clearly marked meat and dairy stations with colour-coded equipment
  • Unpack and organise all kosher supplies shipped from the city
  • Test all equipment and do trial runs of the first meals

Step 2: Ingredient Sourcing

We source from certified kosher suppliers — typically from Johannesburg (which has excellent Beth Din-supervised infrastructure). For East African trips (Tanzania, Kenya, Rwanda), supplies are either flown in from Johannesburg or sourced from certified suppliers in Nairobi.

Fresh produce (fruits, vegetables, salads) is bought locally where possible, then thoroughly checked for insects by our mashgiach using standard halachic methods (soaking, inspection, light boxes).

Step 3: Daily Operations

During the trip, the kitchen operates like a small kosher restaurant:

  • Breakfast: Dairy — fresh baked goods (pas yisroel), eggs, cheeses, cereals, fresh fruit, yoghurt, coffee and tea
  • Lunch: Either meat or dairy depending on the day's schedule — picnic boxes for bush lunches, sit-down meals at the lodge
  • Dinner: Meat — multi-course gourmet dinner, often 3-4 courses with wine
  • Snacks: Available throughout the day — biscuits, fruit, nuts, drinks

The Mashgiach's Role on Safari

Our mashgiach isn't just checking boxes — they're an integral part of the experience. A typical day:

  • 5:00 AM: Supervises early breakfast prep before the morning game drive
  • 8:00 AM: Oversees brunch setup while guests are on safari
  • 12:00 PM: Checks all produce, supervises lunch preparation
  • 4:00 PM: Begins dinner prep — checking, measuring, separating
  • 7:00 PM: Final inspection before dinner service
  • Throughout: Available for guests' questions about kashrus, zmanim, halachic queries

Many of our guests form a warm bond with the mashgiach — they become part of the family for the duration of the trip.

Chalav Yisroel on Safari

In South Africa, Chalav Yisroel products are readily available from local dairies under Beth Din supervision. For East African destinations, we either:

  • Ship CY products in cooler boxes from Johannesburg
  • Use long-life CY milk and cream imported from Israel or South Africa
  • Offer plant-based alternatives (oat milk, almond milk) for those who prefer

What About Wine and Alcohol?

All wine served on our safaris is mevushal (flash-pasteurised) to avoid any issues with non-Jewish staff handling open bottles. We stock a selection of excellent kosher wines from Israel and South Africa — including estates like Golan Heights, Yarden, and local South African kosher wineries.

For kiddush on Shabbat, we always have quality grape juice and wine available.
