The Seder in the African Bush

There is something profoundly moving about recounting the story of freedom from Egypt while sitting in the heart of Africa. At The Kosher Safari, we have been arranging full Pesach programs in the bush since our earliest days, and the experience never loses its magic. Our Seder table is set at the lodge dining area — white tablecloths, haggadot for every guest, shmura matzah (both hand and machine), maror, charoset, and four cups of mevushal wine — all shipped from Johannesburg weeks in advance.

Kosher-for-Passover Kitchen Setup

Our mashgiach arrives at the lodge two days before Pesach begins. The kitchen undergoes a full kashering process: countertops are covered or blowtorched, all utensils are brand new (dedicated Pesach sets that we transport from our base in Johannesburg), and separate meat and dairy stations are established. Every product used during the eight days is certified kosher for Passover — we source from the South African kosher food industry, which has excellent Pesach ranges, supplemented with specialty items imported from Israel when needed.

What the Menu Looks Like

Forget the stereotype of bland Pesach food. Our chef prepares a full gourmet Pesach menu: herb-crusted rack of lamb, grilled chicken with preserved lemon, potato kugel, fresh salads, roasted vegetables, matzo ball soup, and a range of Pesach-friendly desserts (flourless chocolate cake, coconut macaroons, fresh fruit platters). Breakfast includes eggs, cheese boards (dairy mornings), fresh fruit, yogurt, and matzo with various spreads. Lunch and dinner alternate between meat and dairy meals.

Chol HaMoed Activities

The intermediate days of Pesach are spent on safari — morning and afternoon game drives, bush walks, and cultural visits. South Africa is ideal for Pesach timing: March-April is late summer, the weather is pleasant (25-30°C during the day), and the bush is still green and lush. The Big Five are active, and the afternoon light is spectacular for photography.

Location and Logistics

We recommend South Africa for Pesach programs — specifically the Greater Kruger area (Sabi Sands, Timbavati) or Madikwe Game Reserve (malaria-free). The proximity to Johannesburg makes food supply straightforward. For larger groups, exclusive-use lodges work best — no other guests means the entire kitchen is ours. Minimum group size is six adults. We handle everything: food, equipment, mashgiach, haggadot, and all logistics. Your only job is to show up and experience freedom.

Pesach Observance in the Bush

Chametz is removed from all areas used by our group and locked away or disposed of. Bedikat chametz takes place the night before with a candle, feather, and spoon — just as at home, but with the sounds of the bush outside. Birkat Hamazon after the Seder, sung around the campfire as hyenas call in the distance, is an experience that stays with our guests for life. We provide benchers and zemiros sheets. The four questions asked under the African stars take on new depth — why is this night different from all other nights? — when you are thousands of kilometres from your normal Pesach table.
